Quinoa Salad with Cranberries and Pistachios

This fluffy quinoa salad is quick, easy, and a perfect side dish for your next party.  Quinoa is naturally wheat and gluten free and a great source of complete protein.


Serves: 6


Ingredients:

  •  - 1 cup quinoa
  •  - 2 cups vegetable broth
  •  - 1 bunch green onions
  •  - 1/3 cup dried cranberries
  •  - 1/3 cup pistachio nutmeats
  •  - 2 tbsp. olive oil
  •  - 2 tbsp. red wine vinegar
  •  - Black pepper to taste


Directions:

  1. Cook quinoa in the 2 cups vegetable broth. Bring to a boil, cover and simmer for 15 minutes. Set aside to cool.
  2. Finely chop green onions. Add to quinoa along with cranberries, olive oil and red wine vinegar.
  3. Toss pistachios just before serving. Add pepper to taste.
