This fluffy quinoa salad is quick, easy, and a perfect side dish for your next party. Quinoa is naturally wheat and gluten free and a great source of complete protein.
Serves: 6
Ingredients:
- - 1 cup quinoa
- - 2 cups vegetable broth
- - 1 bunch green onions
- - 1/3 cup dried cranberries
- - 1/3 cup pistachio nutmeats
- - 2 tbsp. olive oil
- - 2 tbsp. red wine vinegar
- - Black pepper to taste
Directions:
- Cook quinoa in the 2 cups vegetable broth. Bring to a boil, cover and simmer for 15 minutes. Set aside to cool.
- Finely chop green onions. Add to quinoa along with cranberries, olive oil and red wine vinegar.
- Toss pistachios just before serving. Add pepper to taste.
